  • Peel the potatoes if desired, cut them into quarters if the potatoes are large or in half for smaller potatoes, and add to a large pot. Add enough cold water to cover the potatoes by 1 inch, and 2 tsp of salt.
  • Bring the water to boil over high heat, then reduce to medium and cook at a rapid simmer for 15-20 mins. Check that the potatoes are tender, they should easily slide off when pierced with a fork.
  • While the potatoes are boiling, prepare the roasted garlic but cutting off the top of the garlic, covering with 1 tbsp olive oil, wrapping in tinfoil and air frying at 390°  for 20 mins. (For oven instructions see notes)
  • Using a fork, mash together the vegan butter and roasted garlic.
  • Drain the potatoes in a colander, then place back into the pot. Mash the potatoes until they are nice and fluffy, then add in your butter mixture, salt and pepper. Adjust the seasoning if needed.
