Peel the potatoes if desired, cut them into quarters if the potatoes are large or in half for smaller potatoes, and add to a large pot. Add enough cold water to cover the potatoes by 1 inch, and 2 tsp of salt.
Bring the water to boil over high heat, then reduce to medium and cook at a rapid simmer for 15-20 mins. Check that the potatoes are tender, they should easily slide off when pierced with a fork.
While the potatoes are boiling, prepare the roasted garlic but cutting off the top of the garlic, covering with 1 tbsp olive oil, wrapping in tinfoil and air frying at 390° for 20 mins. (For oven instructions see notes)
Using a fork, mash together the vegan butter and roasted garlic.
Drain the potatoes in a colander, then place back into the pot. Mash the potatoes until they are nice and fluffy, then add in your butter mixture, salt and pepper. Adjust the seasoning if needed.
Chop with fresh chives, or vegan gravy, serve and enjoy!

To roast garlic in the oven: follow the same steps above, but instead of the air fryer, roast in the oven at 400° for 40-50 mins. This does take longer than the air fryer version, so it's best to make the roasted garlic ahead.
