This is one of my favourite salsa recipes and is inspired by Mexican cucumber salsa. Making this easy cucumber salsa is my new favourite way to use up extra cucumbers from the garden this time of year.
- 2 medium cucumbers, peeled and diced
- 2 limes, juiced
- 1/2 red onion, finely diced
- 2 tbsp olive oil
- 1/2 cup chopped cilantro (about one handful)
- 1 jalapeño, diced (see notes below on spice level)
- Sea Salt and pepper, to taste
