Heat a large pan on medium heat with a tablespoon of extra virgin olive oil. Add the diced onion and cook for 3-4 minutes until softened. Then add the minced garlic and cook for another minute until fragrant.

Add the Italian seasoning spice blend, coconut milk, lemon juice, nutritional yeast, sun-dried tomatoes, chickpeas, tomato paste, and half of the chopped basil.
