  • 4 bananas
  • 1 sheet puff pastry, thawed
  • ½ cup dark chocolate, chopped (or chocolate chips)
  • 16 candy google eyes
  • 1 tbsp melted butter (vegan)
  • sprinkles (optional if your kids want to add them. tastes better without in my opinion lol!)

Instructions
 

Prepping

  • Line a baking sheet with parchment paper and pre-heat the oven to 400 degrees.
  • Cut the puff pastry into 8 equal strips. (It's best if the banana is mostly covered in puff pastry. I tried making them with thinner criss-crossed strips but the texture of the banana dried out a bit and wasn't as nice.)
  • Peel the bananas and cut them in half lengthwise.
  • Carefully scoop out the middle of the banana creating a boat for the chocolate.

Wrapping the Mummies

  • Sprinkle chocolate into the banana boats, and carefully wrap them up with the strip of puff pastry. Wrap all the way around the banana so it covers the top and bottom.
  • Brush the top of each pastry with melted butter.

Baking

  • Bake at 400 for 18-20 minutes or until golden.
  • Place the google eyes into the cooked pastry carefully. (Use a little icing or melted chocolate to help them stick if desired.)
  • Allow to cool for a few minutes, and enjoy! They are best enjoyed fresh out of the oven.
