Ingredients & Substitutions: What Is In Vegan Teriyaki Sauce Recipe

This recipe requires a handful of simple ingredients that come together to create a flavorful and delicious teriyaki sauce. You will need:

  • Water: This is used to help thin out the sauce and create a smooth consistency.
  • Sesame Oil (or olive oil): Sesame oil adds a rich, nutty flavor to the sauce. If you can’t have sesame, you can substitute it with olive oil.
  • Soy Sauce (or tamari for gluten-free): Soy sauce is a key ingredient in traditional teriyaki sauce, but it’s not vegan-friendly or gluten-free. To make this recipe vegan or gluten-free, use tamari instead.
  • Pure Maple Syrup: Maple syrup adds sweetness to the sauce without overpowering the other flavors.
  • Light Brown Sugar: Brown sugar helps to balance the salty and savory flavors of the sauce.
  • Grated Fresh Ginger: Fresh ginger adds a bright, zesty flavor to the sauce.
  • Minced Garlic: Garlic adds depth and complexity to the sauce.
  • Hot Chili Flakes: Chili flakes add a spicy kick to the sauce. You can adjust the amount of chili flakes to your liking.

To thicken the sauce, you will also need a cornstarch slurry made with:

  • Cornstarch: Cornstarch is a common thickening agent used in many sauces and gravies.
  • Cold Water: Cold water is used to dissolve the cornstarch and create a slurry that can be added to the sauce.

Helpful Tools

  • A medium saucepan is a perfect size for this recipe.
  • A whisk is useful for mixing the ingredients together and stirring the sauce while it cooks.
  • Measuring cups and spoons are essential for ensuring the right amounts of ingredients are used.
  • A small mixing bowl and fork can be used to make the cornstarch slurry.

Place the saucepan over medium heat and stir to combine all the ingredients. Bring the mixture to a boil, stirring frequently.

Once the mixture comes to a boil, reduce the heat to low and let it simmer for a few minutes.

While the sauce is simmering, make the cornstarch slurry. In a small bowl, mix together the cornstarch and cold water until it forms a smooth paste.

Once the sauce has simmered for a few minutes, slowly pour the cornstarch slurry into the saucepan while stirring constantly.

Stir the sauce until the cornstarch is fully incorporated and let it continue to simmer for at least 5 more minutes until it thickens. Stir occasionally to make sure the sauce doesn’t stick to the bottom of the saucepan.

Once the sauce has thickened to your liking, remove it from the heat and let it cool for a few minutes.

Tips & Tricks

  • To make the sauce even more flavorful, consider adding a splash of rice vinegar or mirin.
  • If you prefer a sweeter sauce, increase the amount of maple syrup or brown sugar to your liking.
  • For a thicker sauce, add more cornstarch slurry as needed, but be careful not to add too much as it can make the sauce too thick.
  • Leftover sauce can be stored in an airtight container in the refrigerator for up to a week.
