- 3 cups water
- 1 tbsp extra virgin olive oil

- ½ a large red or white onion, finely diced
- 1 package of low-sodium taco seasoning or use 3 tbsp of your own homemade
- 1 19oz can black beans, rinsed and drained
- 1 12oz can whole kernel corn, drained
- 1 cup salsa of choice I like chipotle
- ¾ cup vegan shredded cheese optional
For Serving
- 8 large flour tortillas use whole wheat or protein wraps for extra protein
