1tbspextra virgin olive oil
2bell peppers, chopped
½a largered or white onion, finely diced
1package of low-sodium taco seasoningor use 3 tbsp of your own homemade
119ozcan black beans, rinsed and drained
112ozcan whole kernel corn, drained
1cupsalsa of choiceI like chipotle
¾cupvegan shredded cheeseoptional

8largeflour tortillasuse whole wheat or protein wraps for extra protein

Instructions
Cooking the Burrito Filling
In a large dutch oven on medium heat, add olive oil, onion, and bell peppers. Cook for 3-4 mins.
Now, add in the water, rice, taco seasoning, salsa, corn, and black beans and stir to combine.
Bring to a boil, then reduce to a simmer for 12-15 mins (or however long your rice package instructions state).
Remove from heat, fluff the rice mixture with a fork, and allow it to sit covered for another 5 mins.
Burrito Assembly
Divide the filling evenly between 8 large tortillas. Add vegan beef and grated cheese in now if adding.
Roll up the burrito, wrap tightly in foil or plastic wrap, and place in the freezer for storage.
Pull out your frozen burritos and re-heat when you are ready to eat. Top eat bite of the burrito with toppings like guacamole and hot sauce if desired. Remember - do not put foil in the microwave. Enjoy!
Notes
These burritos are delicious as is, however, feel free to add other toppings fresh onto eat bite of the burrito once it's been reheated. Here are some examples:

Vegan Ground "Beef"If you would like to add more protein, use 1 package of vegan Mexican ground beef and heat it according to the package instructions. Alternatively, you can make your own homemade vegan ground beef using TVP.
