Ingredients
  

  • ½ head green cabbage, finely diced
  • ½ cucumber, finely diced
  • 1 bunch green onions, finely diced

Dressing

  • 1 cup spinach
  • 1 cup basil
  • 1 shallot
  • 2 cloves garlic
  • juice of 2 lemons (1/4 cup lemon juice)
  • ¼ cup extra virgin olive oil
  • ¼ cup hemp hearts
  • cup nutritional yeast (or parm)
  • 2 tbsp white wine vinegar
  • salt and pepper to taste

Optional

  • tortilla chips to serve

Instructions
 

  • Finely diced the cabbage, cucumber and green onions and add to a large salad bowl.
  • In a high powered blender or food processor, add spinach, basil, shallot, garlic, nutritional yeast, olive oil, lemon juice, hemp hearts, vinegar, salt and pepper. Blend until smooth and creamy, and top the salad with this dressing.
  • Toss well to combine, and serve with tortilla chips for dipping. Enjoy!
