Vegan Fudge No Bake Brownie Bars

Ingredients
  

  • ¾ cup all-natural peanut butter
  • ¼ cup maple syrup
  • 2 tbsp melted coconut oil
  • cup oat flour
  • ¼ cup cocoa powder
  • ½ cup dark chocolate, melted
  • 1 tsp vanilla extract
  • pinch of salt
  • ¼ cup chopped walnuts

Instructions
 

  • In a medium mixing bowl, combine peanut butter, maple syrup, vanilla and melted coconut oil. Whisk to combine.
  • Next, add in cocoa powder, oat flour, chopped walnuts and salt. Stir again to combine.
  • Place the mixture into a 8x8 inch baking dish lined with parchment paper. Use your hands or the back of a spoon to flatten it.
  • Place it in the freezer while you melt the chococlate.
  • Next, spread the melted dark chocolate evenly on top.
  • Place back into the freezer for about 20-30 minutes. Store in the freezer and allow these to thaw for a few minutes before eating. Enjoy!

If you don't have an 8x8 baking dish simply place the mixture on a baking sheet lined with parchment and flatten it to about 1/2-3/4 of an inch thick.
