Lemon Poppyseed Vinaigrette

This lemon poppyseed vinaigrette combines extra virgin olive oil, fresh lemon juice, white wine vinegar, Dijon mustard, and maple syrup with poppy seeds for a deliciously tangy and sweet dressing perfect for summer salads. Simple to prepare and full of flavor!

Ingredients
  

  • ¼ cup extra virgin olive oil
  • ½ large lemon juiced (about 2 tbsp)
  • 2-3 tbsp white wine vinegar (or red wine vinegar)
  • 1 tsp dijon mustard
  • 2 tbsp maple syrup (sub vegan honey or sugar)
  • salt and fresh ground black pepper to taste
  • 1 tbsp poppy seeds

Instructions
 

  • In a small bowl, add olive oil, fresh lemon juice, red wine vinegar, dijon, maple syrup, salt and pepper. Blend it up using a small immersion blender, or add it to a small blender.
  • Once it is smooth and thoroughly combined, stir in the poppyseeds. Serve over your favorite salad, and enjoy!
