In a mason jar, add olive oil, vinegar, garlic, oregano, dijon, salt and pepper. Secure the lid, and shake well to combine. (This can be combined in a blender if preferred.)
Serve on top of your favourite Greek salad, and enjoy!

Optional: I like to add in 1 tbsp of nutritional yeast. This is not traditionally in Greek salad dressing, but it adds a nice "cheesy" flavour as well as extra vitamins and minerals.
