Blueberry Lemon Overnight Oats

Ingredients
  

Oats

  • 2 cups rolled oats (Quick oats work too, but has a different texture)
  • 2 cups plant milk of choice
  • 4 scoops vanilla protein powder (optional - if you don't use this add 1 tsp vanilla extract)
  • 2 tbsp ground flax seeds
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice (1 lemon)
  • 1 cup fresh blueberries for topping

Chia Jam

  • 1 ½ cups fresh or frozen blueberries
  • 1 tsp lemon juice
  • 2 tbsp chia seeds
  • 1 tbsp maple syrup (optional)

Instructions
 

  • In a saucepan on medium heat, add blueberries, allow them to heat up and gently mash them to your desired consistency.
  • Next, add your lemon juice, chia seeds, and maple syrup. Cook on medium-low heat for 2-3 minutes until everything is combined and heated through.
  • Allow to cool for at least 5 mins, this jam will thicken as it cools.
  • While the jam is cooling, prepare the oats. In a large mixing bowl add oats, plant milk, protein powder, lemon zest, lemon juice, and ground flax. Stir to combine.
  • Using 4 jars, assemble them by layering first the oat mixture, then the chia jam, oat mixture, then chia jam again. Top with fresh blueberries, and leave in the fridge for at least 8 hours.
