5 Minute Peanut Satay Sauce Recipe

This quick and easy peanut satay sauce recipe combines creamy coconut milk, smooth peanut butter, and a touch of spice. It's perfect for enhancing noodle bowls, spring rolls, salads, and more!

Ingredients
  

  • ½ cup coconut milk
  • cup all natural, smooth peanut butter
  • 1-2 tbsp red Thai curry paste (adjust to your preference)
  • 2 tbsp soy sauce or tamari
  • 1-3 tbsp lime juice (adjust to your preference)
  • 1 tbsp maple syrup (or other sweetener)
  • 1 tbsp rice vinegar
  • 1 tbsp grated ginger
  • 1 clove minced garlic

Instructions
 

  • In a medium mixing bowl, whisk together the peanut butter, coconut milk, Thai curry paste, soy sauce, lime juice, maple syrup, rice vinegar, garlic and ginger.
  • Taste the satay sauce and adjust the spice level, or amount of lime juice if needed. If the sauce is too thick, add water 1 tbsp at a time. If the sauce is too thin, add peanut butter 1 tbsp at a time.
  • Perfect for noodle bowls, spring rolls, summer rolls, salads, grilled tofu and more. Enjoy!
