Ingredients
  

  • 4 cups vegetable broth
  • 4 green onions thinly diced
  • 1 tbsp soy sauce or tamari for GF
  • 3 tbsp finely chopped dry seaweed sheets
  • ½ block silken tofu cut into tiny cubes
  • 1 cup chopped greens (spinach, kale or chard) optional

Miso Mixture

  • ¼ cup white miso paste
  • ¼ cup boiling water

Instructions
 

  • In a medium pot, add vegetable broth and bring to a simmer.
  • In a bowl add ¼ cup of boiling water with ¼ cup of white miso paste. Whisk to combine, then add the water miso paste directly into the pot with broth.
  • Next, add in your greens, onions, soy sauce, seaweed and silken tofu cubes. Add the tofu cubes in very gently and carefully as they can break easily.
  • Allow all the ingredients to simmer for about 5 mins, then serve and enjoy!
