Toast baguette slices on in a pan on medium heat with a little olive oil. (Or, Preheat bake at 350°F and toast both sides on a baking sheet.)
Toast until they're golden brown and crisp.
Prepare the Tomato Mixture
In a mixing bowl, combine diced tomatoes, fresh basil, minced garlic, extra virgin olive oil, vegan parm, salt, and pepper.
Assemble Your Bruschetta
Take the toasted baguette slices and spoon the tomato mixture onto each slice generously. Drizzle balsamic reduction on top, serve and enjoy!

* Add the tomato mixture on top of the tomato slices when ready to serve. If the tomato mixture sits too long on the toasted baguette it will become soggy. If it's being served as part of an appetizer spread I recommend leaving the tomato mixture and balsamic reduction to the side. Allow guests to assemble the bruschetta to maintain a crisp texture.
