Spread a thin layer of peanut butter on top of each rice cake.
Place the rice cakes in the freezer for 5-10 mins to allow the PB to set.
Meanwhile, melt the dark chocolate either in a double boiler, or by microwaving 30 seconds at a time.
Dip the peanut butter side of each rice cake into the melted chocolate carefully to thinly coat the tops.
While the chocolate is still melted, add your toppings such as flaky salt or chopped salted peanuts. Repeat the process with each rice cake.
Place the rice cakes back into the freezer for 5 mins to solidify the chocolate.
