Ingredients
  

  • 1 cup almond flour (or chickpea flour)
  • ½ cup all natural peanut butter
  • ¼ cup maple syrup
  • 3-4 tbsp jam (I recommend raspberry!)

Instructions
 

  • Pre-heat the oven to 350°.
  • In a medium mixing bowl combine almond flour, peanut butter, and maple syrup.
  • Roll the batter into 12 equal balls. Place each ball on a baking sheet lined with parchment paper, and use your thumb to gently press into the center.
  • Drop a small dollop of jam into each cookie center, and bake for 9-10 minutes.
  • The cookies will be very soft and crumbly when they first come out of the oven. Allow them to cool for at least 15 minutes and they will begin to harden perfectly. Enjoy!
