Roasted Vegan Brussel Sprouts

These roasted vegan Brussels sprouts are tender with crispy edges and topped with balsamic reduction, dried cranberries, and candied pecans. The perfect holiday side dish with a touch of sweetness that makes every bite delightful!

Ingredients
  

Brussel Sprouts

  • 2 lbs Brussel sprouts 900g
  • 1-2 tbsp Extra virgin olive oil
  • Salt & pepper to taste

Toppings

  • 2-3 tbsp Balsamic reduction
  • 3 tbsp Dried cranberries
  • ¼ cup Candied pecans
  • ¼ cup Vegan feta or goat cheese optional

Instructions
 

  • Wash your Brussel sprouts, cut off the hard ends and cut them in half lengthwise.
  • Place on a baking sheet with parchment paper and toss in olive oil, salt and pepper.
  • Bake at 400 degrees for 25-30 minutes or until they have golden edges.
  • Drizzle with balsamic reduction and top with dried cranberries and candied pecans. Serve, and enjoy!
