Ingredients

Fluffy Egg White Protein Oatmeal

  • ½ cup rolled oats (old-fashioned) use certified gluten-free if needed
  • ¾ cup unsweetened soy milk plus an extra splash if desired
  • ¼ cup water
  • ½ cup liquid egg whites carton pasteurized egg whites
  • ½ tsp ground cinnamon
  • 1 pinch salt
  • ½ tsp pure vanilla extract (optional)
  • maple syrup or sweetener of choice (optional) to taste
  • optional toppings: blueberry chia jam, fresh berries, nut butter, or seeds for serving

Instructions

How to Make Protein Oatmeal with Egg Whites

  • Simmer the Oats: Add the rolled oats, unsweetened soy milk, water, cinnamon, and pinch of salt to a small saucepan. Bring to a gentle simmer over medium heat and cook for 3–5 minutes, stirring occasionally, until the oats are tender and almost fully cooked.
  • Lower the Heat: Turn the burner heat down to low before adding the egg whites.
  • Whisk in the Egg Whites: Slowly pour in the ½ cup liquid egg whites in a steady stream while whisking continuously. Keep the oats moving constantly so the egg whites emulsify seamlessly into the oatmeal instead of scrambling.
  • Cook Until Thick & Fluffy: Continue whisking and stirring over low heat for another 2–3 minutes until the oatmeal becomes thick, airy, fluffy, and custard-like and the egg whites are completely cooked through.
  • Flavor & Adjust: Remove from the heat and stir in the vanilla extract or sweetener if using. Add an extra splash of soy milk if you prefer a looser consistency.
  • Top & Serve: Spoon into a warm bowl and top with homemade chia jam, fresh berries, nut butter, or seeds. Serve immediately!

Notes

Why ½ Cup of Egg Whites Works So Well
Using a full ½ cup of liquid egg whites paired with unsweetened soy milk boosts this single-serve bowl to 24 grams of protein without making the oatmeal taste eggy at all. Instead, it whips into a cloud-like, custard-style texture.
The Secret to Never Scrambling the Egg Whites
Always turn the heat down to low before pouring in the egg whites, and whisk continuously in a slow, steady stream so they disappear smoothly into the hot oats.
