Ingredients
  

Veggies

  • 4 cups chopped kale
  • 1 tbsp extra virgin olive oil
  • 2 large carrots, shredded
  • 2 cups arugula

Tofu

  • 1 brick extra firm tofu, pressed
  • 1 tbsp soy sauce (or tamari for GF)
  • 2 tbsp cornstarch
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp paprika
  • salt and pepper to taste

Buffalo Tofu

  • Preheat oven to 400 degrees.
  • In a large mixing bowl whisk together olive oil, soy sauce, paprika, garlic powder, salt and pepper.
  • Tear tofu into bite-sized pieces and add directly into the bowl with the marinade. Stir gently to combine.
  • Add cornstarch then stir again to evenly coat the tofu. Place the tofu onto a baking sheet with parchment paper, and bake for 30 minutes, flipping halfway.
  • Toss cooked tofu with the buffalo sauce until each piece is evenly coated.

Meal Prep Aseembly

  • Massage the chopped kale for 1 minute in 1 tbsp of olive oil. This helps reduce the bitterness, and soften the kale.
  • In 4 meal prep containers, evenly divide the kale, shredded carrots, arugula, and cooked tofu. Add 2 tbsp of ranch dressing to each meal when ready to serve.
