Ingredients
  

Oat Peanut Butter Cups

  • 1 cup quick oats or rolled oats
  • ¼ cup oat flour or almond flour
  • 1 cup natural peanut butter
  • ½ cup maple syrup or agave or honey
  • 1 tsp vanilla extract
  • ½ tsp salt

Chocolate Topping

Optional Toppings

  • flakey sea salt, coconut shreds, chopped nuts etc.

Instructions
 

Cups

  • In a medium bowl, combine oats, oat flour, peanut butter, syrup, vanilla, and salt.
  • Evenly distribute the mixture into 10 slots of a muffin tin lined with liners or lightly greased.
  • Flatten it out as much as possible. Freeze the tray for a minimum of 2 hours.

Chocolate Topping

  • Melt the chocolate chips, using a double boiler or the microwave, stirring consistently until the mixture is smooth and fully melted.
  • Take the tray out of the freezer and spoon approximately 1 tablespoons of the melted chocolate onto the tops of each frozen peanut butter oat cup, smoothing it out evenly. Sprinkle with toppings of choice immediately while the chocolate is still melted.
  • Return to the freezer for an additional hour. For storage, keep them in an airtight container in the freezer. Enjoy!
