1cupuncooked dry brown lentils(or use 3 cups canned lentils, rinsed and drained.)
1tbspextra virgin olive oil
1smallyellow onion, diced
1greenbell pepper, diced
3clovesminced garlic
1cuptomato sauce
2tbsptomato paste
1tspyellow mustard
2tbspmaple syrup
1tbspsoy sauce or tamari
2-3tbspBBQ sauce
Dry Spices
3tbspchili powder
1tspsmoked paprika
hot chili powder to taste
salt and pepper to taste
Instructions
In a pot on medium heat add dry rinsed lentils with 4 cups of water, bring to a boil and simmer for 15-20 minutes or until the lentils are tender. Drain, and set aside. (Or use 3 cups canned lentils instead, rinsed and drained).
In a pan on medium heat, add olive oil, onion and green bell pepper. Cook 3-4 mins.
Next, add in minced garlic, chili powder, and smoked paprika. Keep stirring and toast the spices in the pan for 1 minute.
Next, add tomato sauce, soy sauce, mustard, tomato paste, maple syrup, BBQ sauce and cooked lentils. Cook for a few minutes until all ingredients are combined and heated up. Season with salt, pepper and hot chili powder to taste.
Serve on top of a bun with your favourite coleslaw, on top of a baked potato or sweet potato, or on fresh lettuce as a lettuce wrap. Enjoy!
