Ingredients
  

  • 2 cups rolled oats
  • 2 tbsp chia seeds
  • 2 cups coconut milk
  • 2 tbsp poppy seeds
  • zest of 1/2 lemon
  • 1 lemon juiced
  • 1 tsp vanilla extract
  • 2-4 tbsp maple syrup

Toppings

  • fresh blueberries, vegan yogurt

Instructions
 

  • Add all ingredients into a mixing bowl and stir well to combine.
  • Separate into 4 jars or airtight containers. This meal prep makes 4 servings.
  • Allow to sit in the fridge for at least 8 hours. Enjoy right from the fridge!
