In a medium mixing bowl, add flour, semolina, and salt. Mix well to combine and create a well in the mixture.
Add the water and extra virgin olive oil into the well, and mix well to combine. (You can use a wooden spoon, but I recommend mixing with clean hands for the best results!)
Transfer the dough to a lightly floured work surface, and knead the dough until it's smooth, soft and elastic. This will take between 7-10 minutes. Set a timer to ensure you are kneading for at least 7 minutes total. (It may feel like a long time in the moment, but it's worth it!)
If the dough is too dry, add a little extra water. If it's too wet, add a little extra flour. Only add a tiny bit at a time and be careful not to alter it too much.
Form the dough into a ball, cover with plastic wrap, and allow to sit in the fridge for 30 minutes.
