Ingredients

Muffin Batter

  • 2 cups plant milk
  • 2 cups quick oats or rolled oats
  • 2 medium apple, sliced
  • ¼ cup pure maple syrup
  • 2 tbsp brown sugar (optional, but delicious!)
  • cup all natural peanut butter
  • 3 tbsp ground flax
  • 1 tbsp cinnamon
  • 1 tsp baking powder
  • pinch of salt

Apple Topping

  • 2 large apples cut into small cubes
  • 2 tbsp maple syrup
  • 1 tsp cinnamon

Instructions

Prep

  • Preheat oven to 375°.
  • Add 1 cup of the oats, flax seeds, maple syrup, natural peanut butter, cinnamon, baking powder, plant milk, and sliced apples into a blender.
  • Blend on high until smooth and creamy.
  • Stir in the the remainder of the oats into the batter for texture.

Cooked Apples Topping

  • In a small bowl add the cubed apples, cinnamon and maple syrup. Stir to combine.

Baking

  • Get out 2 muffin tins and add in the muffin liners. There should be enough for 12 muffins.
  • Pour the batter evenly between the muffin liners, then top each one with the cubed maple cinnamon apples.
  • Bake for 25-35 minutes or until cooked through. Check with a toothpick to make sure the middle is cooked. (Mine took 35 mins)
  • Allow the muffins to cool on a cooling rack and give them time to set. If you try to eat them while they are still warm they may fall apart slightly and stick to the muffin liner.
  • These muffins are a different texture than muffins made with regular flour but they are SO healthy, delicious and full of fiber! They are perfect for meal prep and are delicious slightly heated with a little peanut butter. Enjoy!
