Add 1 cup of the oats, flax seeds, maple syrup, natural peanut butter, cinnamon, baking powder, plant milk, and sliced apples into a blender.
Blend on high until smooth and creamy.
Stir in the the remainder of the oats into the batter for texture.
Cooked Apples Topping
In a small bowl add the cubed apples, cinnamon and maple syrup. Stir to combine.
Baking
Get out 2 muffin tins and add in the muffin liners. There should be enough for 12 muffins.
Pour the batter evenly between the muffin liners, then top each one with the cubed maple cinnamon apples.
Bake for 25-35 minutes or until cooked through. Check with a toothpick to make sure the middle is cooked. (Mine took 35 mins)
Allow the muffins to cool on a cooling rack and give them time to set. If you try to eat them while they are still warm they may fall apart slightly and stick to the muffin liner.
These muffins are a different texture than muffins made with regular flour but they are SO healthy, delicious and full of fiber! They are perfect for meal prep and are delicious slightly heated with a little peanut butter. Enjoy!
