Creamy Italian White Beans Recipe One Pot

Creamy One Pot Italian White Bean dish with coconut milk, sun-dried tomatoes, and spinach. A comforting and nutritious plant-based option!

Ingredients
  

  • ½ small red onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp Italian seasoning
  • ¼ cup tomato paste
  • 1 19oz can coconut milk
  • 1 19oz can white beans, rinsed and drained (cannellini beans)
  • ½ cup chopped sun-dried tomatoes
  • 3 tbsp nutritional yeast
  • 2 large handfuls baby spinach, roughly chopped
  • chili flakes, salt & pepper to taste

Toppings

  • ½ lemon, juiced (2-3 tbsp)
  • chopped fresh basil
  • vegan parmesan cheese

Instructions
 

  • In a pan on medium heat, add 1 tbsp olive oil and the chopped red onion. Saute for 3-4 mins.
  • Next, add in garlic and Italian seasoning and cook for 1 minute stirring constantly.
  • Add in tomato paste and stir to combine.
  • Add in coconut milk, sun-dried tomatoes, white beans, chili flakes, and nutritional yeast. Stir, and simmer for 10-12 minutes to reduce the coconut milk.
  • Next, add in the chopped spinach, lemon juice, salt and pepper. Cook for 1-2 mins or until the spinach has wilted.
  • Top with fresh basil, and vegan parm if desired. Serve on top of rice, pasta, with a crusty bread, or just by itself. Enjoy!
