Blueberry Baked Oatmeal

Ingredients
  

Blueberry Baked Oatmeal

  • 2 cups plant milk
  • 2 cups rolled oats or quick oats
  • 2 cups frozen blueberries no need to thaw
  • ¼ cup pure maple syrup
  • 2 tbsp brown sugar optional, but delicious!
  • cup all natural peanut butter
  • 1 tsp vanilla extract
  • ¼ cup ground flax
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • pinch of salt

Chia Jam Topping

  • 1 ½ cups blueberries frozen or fresh
  • 1 tsp lemon juice
  • 2 tbsp chia seeds
  • 1 tsp lemon juice
  • 1 tbsp maple syrup or honey

Instructions
 

Oatmeal Bake

  • Preheat oven to 350°.
  • Add all ingredients for the blueberry baked oatmeal into a 6x9 baking dish. Stir well to combine, then bake for 35-40 mins.

Chia Jam

  • In a small saucepan on medium heat, add blueberries, lemon juice, maple syrup and chia seeds.
  • Mash the berries gently, and cook on medium-low heat for 2-3 mins. (if the berries are frozen, wait until they are thawed and then cook for 2-3 mins)
  • Allow it to cool for at least 5 mins. It will thicken as it cools.

Assembly

  • Add the chia jam on top of the baked oatmeal, and spread it evenly over top.
  • Serve the baked oatmeal by itself, or with a dollop of greek yogurt and a drizzle of peanut butter. Enjoy!
