Easy blueberry baked oatmeal recipe with chia jam! A delicious breakfast made with wholesome ingredients like quick oats, maple syrup, and fresh fruit.
Add all ingredients for the blueberry baked oatmeal into a 6x9 baking dish. Stir well to combine, then bake for 35-40 mins.
Chia Jam
In a small saucepan on medium heat, add blueberries, lemon juice, maple syrup and chia seeds.
Mash the berries gently, and cook on medium-low heat for 2-3 mins. (if the berries are frozen, wait until they are thawed and then cook for 2-3 mins)
Allow it to cool for at least 5 mins. It will thicken as it cools.
Assembly
Add the chia jam on top of the baked oatmeal, and spread it evenly over top.
Serve the baked oatmeal by itself, or with a dollop of greek yogurt and a drizzle of peanut butter. Enjoy!
