Ingredients
  

Nachos

  • 1 large bag tortilla chips
  • 4 green onions, thinly sliced
  • ½ cup sliced black olives
  • 1 jalapeño, finely diced (remove the seeds if you are sensitive to spice)
  • 2 cups shredded vegan cheese (or use 1 batch of my homemade vegan queso)

Refried Beans Vegan Beef

  • 1 can refried beans, vegan
  • 1 lb vegan beef (or make it using my homemade TVP beef recipe)
  • 1 red bell pepper, diced
  • 1 small yellow onion, finely diced
  • 1 tbsp taco seasoning
  • ½ tsp garlic powder

Toppings

  • vegan sour cream
  • salsa
  • hot sauce
  • guacamole

Instructions
 

Refried Beans Vegan Beef Mixture

  • In a pan on medium heat, add 1 tbsp of oil. Add in the diced onion and pepper, and cook for 3-4 mins.
  • Next, add in the taco seasoning and garlic powder and cook for another minute stirring constantly.
  • Add in the refried beans, and vegan beef. If needed add a little water to loosen the mixture. Cook according to package instructions, or until heated through.

Nachos

  • Pre-heat the oven to 425º. Spread an even layer of tortilla chips across a large baking sheet lined with parchment paper.
  • Add a little bit of the refried beans beef mixture to each chip. (Work in layers if needed. You will likely have two layers of chips.)
  • Next, sprinkle on black olives, green onions, jalapeños, and vegan cheese.
  • Place the nachos into the oven and cook until the cheese is nice and melted. This took about 5 minutes for me. If desired, broil on high for 1-2 minutes keeping a close eye on the chips to avoid burning.
  • Serve with vegan sour cream, salsa, hot sauce, and guacamole. Enjoy!
