This vegan cheese fondue is made with creamy cashew cheese, nutritional yeast, vegetable broth, and vegan mozzarella for a rich and cheesy flavor. Serve with your favorite veggies, bread, or fruits for the ultimate dairy free fondue experience.
Start by soaking the cashews in boiling water for 10-20 minutes to soften them.
Drain the water from the cashews and add them to a high-powered blender along with the vegetable broth, garlic, lemon juice, miso, nutritional yeast and tapioca starch. Blend until the cashews are smooth and creamy.
Fondue
In a medium pot on medium heat add in the beer, bring to boil then reduce to a simmer for 5 mins.
Pour in the cheesy mixture from the blender and continue whisking until the fondue thickens. This should take around 3-4 minutes.
Be careful not to leave this alone as tapioca can become quite thick. It needs to be constantly whisked.
As soon as the fondue is almost at your desired consistency, add in the shredded vegan mozzarella and whisk until combined and melted.

The list goes on and on but choose whichever items you enjoy! Storage: I find this fondue is best served fresh. Make a smaller batch if needed and serve right away. If you have a fondue pot serve it in that to keep it warm. If you need to reheat it add extra vegetable broth to a pot on low heat and whisk continuously until you get your desired consistency.
