Homemade Pasta Noodles Vegan No Egg

The Best Homemade Vegan Pasta Noodles! With just a few ingredients and equipment, you can create delicious and wholesome pasta noodles that are perfect for any vegan pasta dish.

Ingredients
  

  • 1 ¼ cup all purpose flour
  • 1 cup semolina flour
  • ½ tsp sea salt
  • ¾ cup water
  • 2 tsp extra virgin olive oil

Instructions
 

  • In a medium mixing bowl, add flour, semolina, and salt. Mix well to combine and create a well in the mixture.
  • Add the water and extra virgin olive oil into the well, and mix well to combine. (You can use a wooden spoon, but I recommend mixing with clean hands for the best results!)
  • Transfer the dough to a lightly floured work surface, and knead the dough until it's smooth, soft and elastic. This will take between 7-10 minutes. Set a timer to ensure you are kneading for at least 7 minutes total. (It may feel like a long time in the moment, but it's worth it!)
  • If the dough is too dry, add a little extra water. If it's too wet, add a little extra flour. Only add a tiny bit at a time and be careful not to alter it too much.
  • Form the dough into a ball, cover with plastic wrap, and allow to sit in the fridge for 30 minutes.

Making the Noodles With a Pasta Machine

  • Cut the dough into 4 equal pieces.
  • Gently flatten each piece using your hand.
  • Run the dough through the pasta roller, starting at the thickest setting and moving towards the thinnest setting one notch at a time. Example: roll the pasta dough through the roller at setting 2, then 3, then 4, then 5. Repeat this process with all 4 pieces of dough.
  • Dust each pasta sheet thoroughly with flour on each side. Next, run the pasta sheets through the pasta cutter attachment to create noodles. (If you are using the pasta sheets for lasagna, simply cut the pasta sheets to fit your baking dish. )
  • Cook the pasta in a pot of salted boiling water for 3-5 minutes.
  • Serve with your favourite sauce, and enjoy!

Making Noodles with a Rolling Pin

  • Cut the dough into 4 equal pieces.
  • Gently flatten each piece using your hand.
  • Place one piece of dough onto a floured work surface, and thinly roll out the dough. Repeat this process with all 4 pieces of dough. Make sure each piece is well floured, continue dusting with flour as needed.
  • Dust with more flour, and loosely roll up your pasta sheet. Cut the roll into strips, and uncurl them to reveal your noodles. Cut the roll into very thin pieces for spaghetti, medium pieces for fettuccine or thicker pieces for pappardelle. (If you are using the pasta sheets for lasagna, simply cut the pasta sheets to fit your baking dish.)
  • Cook the pasta in a pot of salted boiling water for 3-5 minutes.
  • Serve with your favourite sauce, and enjoy!

Notes

Homemade vegan pasta noodles take a little longer to cook than those with eggs. These eggless pasta noodles should be cooked in a pot of salted boiling water for 3-5 minutes or until they float. You can always test a small bite to see if they are cooked to your preference.
