Ingredients
  

  • 1 19oz can white beans, rinsed and drained
  • ½ cup canned artichokes
  • 3 tbsp tahini
  • 3 cloves garlic
  • 2.5 tbsp fresh squeezed lemon juice
  • 2 tbsp artichoke brine
  • salt and pepper to taste

Toppings (optional)

  • high quality extra virgin olive oil
  • dried or fresh herbs to garnish

Instructions
 

  • In a high powered blender or food processor, combine white beans, artichokes, lemon juice, garlic, tahini, artichoke brine, salt and pepper.
  • Start at the lowest speed and gradually increase the speed to blend. Blend for 1 minute or until smooth and creamy. Pause the blending process and scrape the bean mixture down the sides if needed. Continue blending until you have reached the desired consistency.
  • Top with some dried or fresh herbs, and a drizzle of good quality olive oil. Serve and enjoy!

Notes

This white bean dip is very similar to hummus but uses white beans instead of chickpeas. The recipe is flexible so feel free to play around with the amount of garlic, lemon, and dried herb seasonings.
